A Salad a Day: Take 2 Day 2

Day one of Salad day was a success.  The salad was yummy!  I used rice noodles.  They cooked up larger than I thought, so I made more than I should have.  I also used Braag's Vinaigrette.  It was yummy and I ended up eating the salad for breakfast and lunch too.  LOL.

Today's salad is Tuna Salad:


Ingredients: 
2 cans tuna, drained
3 ribs celery, finely diced
2 T. fresh dill
1/4 red onion finely diced
1/4 c. mayonnaise
1/4 t. salt
1/4 t. black pepper
1/2 t yellow mustard
1/2 t lemon zest

Put all that in a gluten free pita and we are set for dinner.  mmmmm.....
